HANAYA has Special Course Menu everyday and this was ours menu of the day |
Our 8 course menu was specially customized by the chef and you will definitely get a good surprise from them. I am not sure how frequent they change the menu but if you do a reservation first with HANAYA I am sure they will prepare fresh sashimi and sushi depending on their fresh stocks. We had fresh sushi with fishes delivered all the way from different part of Japan and it just arrived a day before.

Appetiser: Parboiled Red Snapper Soft Roe with Ponzu Sauce |
Now before I explain the taste of the dishes above, let's learn some new terms:
Roe - A seafood delicacy with two varieties:
"Hard roe" is the female fish's eggs.
"Soft roe" (also called "white roe") is the milt (male reproductive glands filled with seminal fluid) of the male fish.
Salted roe is called "caviar."
So yeah our appetiser is Red Snapper's milt with the exotic and salty taste that will last in your mouth even after a few dishes. If you can withstand this taste you can actually eat any kind of sushi. What a great start hahaha!!

Soup: Common Oriental Clam Fritters with Grated Green Beans Sauce |
A green soup with Clam flesh on top of the fish cake fritters accompanied with grated green beans sauce. Tasted kinda smooth in your mouth giving you the mixture of vege and fish.

Entree: Fried Prawn in Three Colors, Tofu Skin, Red Snapper with Mozuku Seaweed and Botargo |
Among all the entrees my favourite would be the fresh red snapper with Mozuku Seaweed. It gaves me a great combination between the slimy seaweed and the slightly crunchy red snapper sashimi. The fried prawn looks really colorful yo. Botargo is a Mediterranean delicacy of salted, cured fish roe, typically from grey mullet or tuna.

A beautiful plate of assorted seasonal sashimi that I've decided to take individual photos of each of it. Since Chutoro was served with sweet and spicy sauce, we were advised to start with the milder flavours such as saba with vinaigrette, Chinese Mactra (Aoyagi), Botan Ebi with Avocado and Cucumber Sauce, Seared Salmon with Bonito Cream Cheese.

I am impressed with the time and efforts spent on this plate of dish. Not only your food looks good in the picture, it also tasted great in your mouth =D I don't know the exact words to describe their taste but all I know is they are really fresh and delicious.

The owner of HANAYA was kind enough to show us the interior of their traditional wooden refrigerator that operate using ice only as this is the traditional way to keep your sashimi and sushi fresh and ready to serve.

Succulent Akita Wagyu Steak paired with Black and White Sea Salts |
The Akita Wagyu Steak is very well done by just having it directly or dap it with small amount of black and white sea salts at the side. There's crispy garlic slice at the side as well (not in the photo)

Chef's Recommended Seasonal Sushi: Sardine, Scallop, Kampachi, Otoro and Sea Urchin |
I am a happy kid when I tasted all five of these seasonal sushi. They were all so fresh that you don't need any sauce to cover the smell. My first time trying out Otoro and it is really a sushi that tasted so different and surprisingly good. We all know that whenever we order an uni sushi the sea urchin must be fresh, or else the taste will be different. HANAYA didn't disappointed me as all five of these sushi are with top rated freshness and taste.

I was already full when I had the 7th course, but when you see the nicely presented cold desserts being served, immediately your stomach got extra space for it haha. There are total three layers in this pineapple flavored jelly covered by coconut bavarois. If you love desserts you will definitely love this one.

A perfect meal should be ended with a cup of siphon coffee or tea and spend the rest of your time digesting the food in the restaurant. I mean, chit-chat with your friends and share your opinion regarding the 8 course and your favourite dishes.
I believe HANAYA 華家 Japanese Dining will be the new top Japanese Dining hang out place in town based on what I've experienced today. The 8-courses menu that we have today is a dinner menu and their lunch menu are still in progress. There will be lunch set available so stay tuned for it.
